6-8 English muffins, toasted
12-14 Eggs
2 C Whole Milk
½ C Half and Half
1 tsp Salt
½ tsp Pepper
16 oz Canadian Bacon
10 oz Baby Spinach
2½ C Cheddar Cheese, shredded
Butter for baking dish

2 Packets Hollandaise Sauce (will need to add ingredients from the sauce instructions)

Toast English Muffins and cut each side into quarters.

Boil spinach in water until wilted, 1-2 min

Combine eggs, milk, half and half, salt and pepper in large bowl.

Butter 9x13 baking dish.

Layer half each: English muffins, spinach, canadian bacon, cheese. Add the 2nd layer, same as the first.

Pour egg mixture over the top, cover with saran wrap and refrigerate overnight, or 8 hours.

To bake, remove from fridge 30 min before baking

Pre heat oven 350º.

Cover with tin foil and bake 30 minutes. Remove foil and bake 25-30 minutes more.

Prepare 2 packets of hollandaise sauce according to packet instructions.

Serve with hollandaise sauce.
