Cilantro Lime Rice Recipe

1 1/2 C Rice (I use Basmati, but any long grain will work. See note below)
1 Bay Leaf
Salt
1 t Olive Oil
2 T Cilantro (minced)
2 T Lime Juice (fresh is best)
2 T Lemon Juice (fresh is best)

Directions:
Directions:
Bring 8 cups of water to a boil. Add rice, bay leaf and 2 teaspoons of salt. Stir and once it returns to a boil, cook it uncovered for 12 minutes.

Once rice is done, remove bay leaf and pour rice into a fine mesh strainer, drain and rinse rice with hot water. Once rice starch has been removed, place rice into a large bowl.

Stir in cilantro, lime and lemon juices. Season to taste with salt (1/4 t).

Serve hot or at room temperature.

You should rinse the rice prior to cooking (recommended) but you don't need to. Rice should not be cooked to the point it becomes mushy, so watch your rice. If you use Basmati or brown rice, it will take 8 cups of water and for other varieties of long grain rice it will only take 4 cups (don't so sure about that).
