1 tsp. vegetable oil
1 onion, minced
2 cloves garlic, crushed
1 carrot, minced
1/2 tsp. ginger, grated
1 lb. ground pork
1 can water chestnuts, minced
1 tsp. salt
1 tsp. pepper
2 tsp. soy sauce
2 T. cilantro, chopped

25 Lumpia wrappers
Egg wash (1 egg beaten together with 1 T. water)

Directions:
Directions:
Mix together all ingredients listed before the wrappers, then proceed as follows:
1. Place wrapper on flat surface with point at you (think baseball diamond).
2. Place 2 T. of meat mixture about 1 inch from the corner point.
3. Begin rolling - tight - twice; fold in sides, continue to roll. Before finishing, place a bit of egg wash on last tip of wrap (this acts like a seal to hold wraps together).
4. Seal and you are ready to fry. Add oil to deep fryer, set temperature to 350ºF, and heat oil until it reaches set temperature. Place rolls in hot oil a few at a time.
5, Allow to brown, turn as needed. Remove and allow to drain on rack or cookie sheet lined with paper towels.
6. Serve with small dish of sweet & sour sauce, or you can use sweet & sour chili sauce. Enjoy!
