Annamaria's Mini Pecan Pies Recipe

Crust:
3 1/2 cups flour
2 sticks of butter
8 oz cream cheese

Filling:
3 large eggs
1 small package of light brown sugar
1 pound chopped pecans
2 TBS butter
1 tsp cinnamon
pinch of salt

Directions:
Directions:
Preheat oven to 350º

Combine crust ingredients and roll out to form pie crust. Put into mini-pie/mini-cupcake tins. You do not need to grease these tins, but I find it is helpful to do so.

Combine all filling ingredients and spoon into prepared pie shells.

Bake about 25 minutes, or until set and starting to brown.

This recipe is from my friend Anna Maria Bonnani Maritato - she made this every year at Christmas time and I picked up that tradition. These are a staple in my Christmas cookie trays each year and one of Toni's favorites (although for Toni I use gluten free pie crusts, which you can do as well).
