Ingredients: 4 skinless, boneless chicken breast halves, 1/2 inch thick salt and pepper to taste 2 eggs 1 c. Panko bread crumbs 1-1/2 c. shredded Italian Cheese mix 2 T. flour 1 c. plus 1 T. olive oil, divided 1 jar Barillo Traditional Sauce or your favorite one 1/4 c. chopped fresh basil or I like to use Italian Seasoning instead Your favorite pasta, angel hair, penne, etc cooked

Directions:Preheat oven to 450ºF. Season chicken with salt and pepper. Beat eggs in a shallow bowl and set aside. Place flour in a sifter or strainer, sprinkle over chicken breasts, coating both sides. Dip flour coated chicken breasts in beaten eggs. Transfer to breadcrumb mixture, pressing the crumbs into both sides. Set aside for about 15 minutes. Heat 1 cup of the olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. It will finish cooking in the oven. Place chicken in a baking dish and top each with about 1/3 cup of sauce. Layer each with cheese, basil or Italian seasoning. Top with 1 to 2 T. of cheese and drizzle with remaining olive oil. Bake in preheated oven until cheese is browned and bubbly and chicken is no longer pink in center, 15 to 20 minutes. Thermometer should read 165º. Heat remaining sauce and top your favorite pasta. Makes 4 servings.
