1 can whole tomatoes, crushed by hand
1 can chickpeas, drained and rinsed
2 onion, sliced
1 cup dried apricots
1 cup chicken broth
2 T honey
4 cloves garlic, mined
2 strips lemon zest
2 bay leaves
1 cinnamon stick
2 tsp paprika
1½ tsp ground ginger
1 tsp each cumin, coriander and turmeric
½ tsp pepper
¼ tsp saffron threads
12 boneless chicken thighs, cut in 1-inch pieces
½ cup chopped parsley
½ cup toasted sliced almonds
lemon wedges

Directions:
Directions:
In slow cooker, combine all ingredients up but not including the chicken. Cook on LOW for 8 hours. Add chicken and cook on HIGH about 40 minutes. Stir in parsley, sprinkle with almonds and serve with lemon wedges.
