1 can coconut milk
⅔ cup chicken broth
¼ cup peanut butter
2 T grated fresh ginger
4 tsp mild curry paste
3 cloves garlic, minced
3 yellow potatoes, peeled and cubed
1 onion, chopped
1 tsp salt
½ tsp pepper
2 T cornstarch
800 frams skinless chicken thighs, quartered
8 green onions, sliced
½ cup chopped cilantro
2 T lime juice

Directions:
Directions:
1. In slow cooker, whisk together coconut milk broth, peanut butter, ginger, curry, garlic. Add potatoes, onion, salt and pepper. Cover and cook LOW 7-8 hours.
2. Whisk cornstarch with 2 T water, sitr into slow cooker. Stir in chicken. Cover and cook on HIGH until juices run clear when chicken is pierced and sauce is thickened, about 40 minutes. Stir in green onion, cilantro, lime juice and zest.
