"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
1 butt ham 5-6 lbs
1 cup apricot jam
2 tbsp brown sugar
1 tbsp mustard
¼ cup vinegar

Directions:
Directions:
Place ham meat side down in roaster. Bake uncovered for about 2 hours at 325º.
Mix glaze ingredients and heat. After 1½ hours score ham and pour over glaze. Continue baking, basting often for another ½ hour. Larger hams will require little more time

Butt hams have a round center bone and shank hams have the long bone. I always buy butt hams because they are easier to slice.
