Italian Ricotta Cookies Recipe

Ingredients: 1 c. butter, softened 2 c. sugar 3 eggs ` (15oz) ricotta cheese 2 tsp vanilla 4 c. flour 1 tsp salt 1 tsp baking soda
Frosting: ¼ c. butter, softened 3-4 c. powdered sugar ½ tsp vanilla 3-4 TBSP milk Colored Sprinkles

Directions:Cream butter and sugar. Add eggs, one at a time beating well after each. Beat in ricotta and vanilla. Combine dry ingredients; gradually add tp creamed mixture. Drop by rounded teaspoons onto grease baking sheets. Bake at 350º for 10-12 minutes until lightly brown. Cool on wire racks. For frosting, cream the butter, sugar and vanilla with enough milk to reach spreading consistency. Frost cooled cookies and sprinkle immediately with decorations. Store in fridge. |
