2 lbs stew beef, cut in 1 inch cubes
1 T curry powder
1 T coriander
1 tsp cumin
1 tsp mustard powder
1 tsp salt
1 tsp pepper
2 onions, sliced
1 red bell pepper, chopped
2 cloved garlic, minced
1 tsp grated lemon zest
1 can stewed tomatoes, with juices. (19 ox)
1 can mild green chilies
1 cup beef stock
2 t cider vinegar
1 cup coconut milk

Directions:

1. Brown meat, stir in spices. Transfer to slow cooker.
2. Add other ingredients and slow cook on low for 8-10 hours or high 4-6 hours.
