4 T butter
2 cups finely chopped onions
4 tsp. curry powder
1 large butternut squash
2 apples, peeled and chopped
3 cups chicken or veggie stock
1 cup apple juice
salt and pepper

Directions:
Directions:
Melt butter in large pot. Add onion and curry powder. Cook, covered over low heat about 20 minutes. Peel and seed squash, then chop. Pour stock, squash and apple into pot and bring to a boil. Simmer partially covered until very soft (at least 25 minutes). Use immersion blender to blend until smooth, adding apple juice a little at a time. (If you are using a food processor, blend in smaller batches). Add salt and pepper to taste. Serves 6-8. Takes about 75 minutes.
