2 c. Flour
1 Tbsp. Sugar
3 teas. Baking Powder
½ teas. Coarsely Ground Pepper
1 Egg
1¼ c. Milk
2 Tbsp. Canola Oil
1 c. (4 oz.) Cheddar Cheese, shredded

Directions:
Directions:
Combine flour, sugar, baking powder and pepper.
Whisk egg, milk and oil together and stir into dry ingredients just until moistened.
Fold in cheese.
Fill greased muffin cups two-thirds full.
Bake at 375º for 25-30 minutes or until toothpick comes out clean.
Cool for 5 minutes before removing from pan to a wire rack.
Serve warm.
