3 ½ cup of sour cherries juice (about 3 ½ pounds of cherries, and ½ cup of water)
1 (1.75 oz.) box of powdered pectin
1 teaspoon of butter (optional - to reduce foaming)
4 ½ cups of white sugar

Directions:
Directions:
To prepare juice. Select fully ripe cherries. Soft; wash and remove stems. Do not pit.

Crush cherries, add water and cover. Bring to a boil on high heat. Reduce heat and simmer for 10 minutes. Extract juice.

In a stainless-steel stockpot, add 3 1/2 cups of cherry juice and butter. Stir in pectin, stirring constantly. Heat on medium-high heat, while stirring constantly. Bring to a rolling boil. Add sugar, while stirring constantly. Bring mixture back to a rolling boil while stirring constantly. Boil for 1 minutes. Remove from heat, skim off any foam, and ladle into prepared jars.
