45 spears asparagus
1 5/8 cups H20
2⅛ cups vinegar 5 percent acidity, either white or apple cider vinegar
1½ Tbsp pickling salt
½ cup sugar
⅓ tsp. celery seed
3 tsp. mustard seed
4½ cloves garlic
3 tsp. dill weed

1. Wash and boil jars
2. Put ½ of garlic plus 1 tsp mustard seed in bottom of each jar
3. Cut off asparagus bottoms (hard part) and pack in jars. (leave ½ inch head space)
Pack tightly
4. Heat lids on medium low heat until time to seal jars
5. Bring to a boil water, vinegar, sugar, salt, and celery seed---stirring occasionally
6. Fill jars with vinegar mixture to top of spears of asparagus. Leave ½ inch head
space.
7. Seal & process 10 minutes in boiling water bath.
