2 cups sugar
3½ cups vinegar
1½ cups water
1 Tbsp. whole Allspice
1½ tsp. salt
2 sticks cinnamon
3 quarts small beets, cooked and peeled

To cook beets:
Wash & drain beets. Leave 2 inches of stems & the tap root. Cover with boiling water & cook until tender.

Directions:

1. Combine all ingredients except beets and simmer until tender.
2. Pack beets in hot jars, leave ½ inch head space.
3. Remove cinnamon stick.
4. Bring liquid to boiling and pour over beets, leaving ½ inch head space.
5. Adjust caps and process 30 minutes in boiling H20 bath.
