1 1/2 c. flour
1 c. sugar
3/4 t. salt
1/2 t. baking soda
2 eggs
1/2 c. vegetable oil
1/2 t. vanilla extract
1/8 t. almond extract
1 1/4 c. chopped peeled fresh peaches
1/2 c. chopped almonds

Directions:
Directions:
In a large bowl, combine flour, sugar, salt and baking soda. In another bowl, beat eggs, oil and extracts; stir into dry ingredients just until moistened. Fold in peaches and almonds. Fill greased or paper lined muffin cups 3/4 full. Bake at 375º for 20 - 25 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack.

Substitution: 16 oz. can of peaches, drained and chopped, can be subbed for the fresh peaches.
