1 can coconut milk (14oz)
¼ cup red curry paste and 1 T sugar
2 tsp fish sauce
2 tsp gingerroot grated
1 lime, zest and juice
1 stalk lemon grass
¼ cup peanuts, plus more for garnish
1 pound small red potatoes, halved
1 pounds, boneless chicken thighs
kosher salt
cilantro for garnish

Directions:

1. Whisk ½ cup water, coconut milk, curry, fish sauce, ginger and lime zest in slow cooker. Smash the lemon grass stalk with the flat side of a knife or mallet and tie in a knot. Add to pot. Add peanuts and potatoes. Top with chicken and press to submerge in the liquid. Cover and cook on LOW 7 hours.
2. Skim off the far. Stir in lime juice, season with salt. Break up the chicken in to chunks. Discard the lemongrass.
3. Serve on rice and top with peanuts and cilantro and lime wedges.
