8 ounces fresh asparagus - trimmed & peeled
2 teaspoons grated fresh ginger
4 radishes - grated
2 T. sesame oil
3 teas. tamari
1 T. rice vinegar
1 T. peanut butter
2 T. chile garlic sauce
10 ounces fresh ramen noodles
¼ cup crispy shallots
¼ cup peanuts - chopped

Directions:

* Bring a medium saucepan of salted water to boil for the pasta - cook until just al
dente (1-2 minutes)
* Add the minced ginger, sesame oil, tamari, rice vinegar, peanut butter and chile garlic
sauce to a medium bowl - whisk until combined
* Heat 1 teas. vegetable oil in a large skillet over medium-high heat - add the sliced
asparagus and cook until bright green and tender (2-3 minutes)
* Add the cooked ramen noodles, sesame ginger sauce, and a pinch of salt and toss
until well coated and hot (another 2-3 minutes)
* Divide the noodles and asparagus between bowls - top with the grated radish, crispy
shallots, and peanuts
* Dig in!!!
