2 cups red wine
1 cup sugar
orange zest (from one orange)
Juice from one orange
lemon zest (from one lemon)
Juice from one lemon
1 tbs chopped crystalized ginger
6 cups fresh rhubarb chopped in 1/2 inch pieces

Directions:
Directions:
1) Combine ingredients in heavy sauce pan and let simmer until a thick compote forms.

2) Serve over ice cream

Variation- puree and chill overnight put in ice cream maker and make into sorbet.
