2 teaspoons of butter
4 shallots, minced
1 teaspoon of ginger, minced
1 cup of sake
6 cups of dashi
2 cups of heavy cream
4 whole sea urchins
3 teaspoons of chives, chopped

Directions:
Directions:
Sauté shallot and ginger in butter for 5 to 10 minutes. Deglaze with sake.

In a stockpot, add dashi and cream. Simmer until mixture is reduced by a quarter.
Add sea urchin blend until smooth. Season with salt and pepper. For extra decoration, serve the soup in the hollow sea urchin shells nestled in a salt pile. Garnish with chives.
