* 2 large onions
* 8 ears of corn, kernels removed (canned corn works too)
* 4 eggs
* 2 cups milk, half-and-half or cream
* 1 cup farmer's cheese or queso fresco (original recipe calls for Queso Paraguay)
* 1 cup shredded mozarella cheese or cheese of choice (havarti, jack, etc work great)
* Parmesan for topping
* 1 tbsp salt
* Olive oil, butter or preferred fat to cook onions

Directions:

1. In a medium pan over medium-low heat, cook onions until translucent. Set aside.
2. In a large mixing bowl, combine onions, corn, cheese, milk, salt. Mix well using a wooden spoon.
3. Separate out half the mixure and lightly blend.
4. Combine with the other half of the mixure. The batter should have an oatmeal-like consistency. It should not be runny.
5. Beat the eggs separately and gently mix them in. Do not over mix.
6. Pour batter into prepared dish, top with parmesan and bake about 45 minutes to 1 hour, until top and sides are golden brown and center is set (it shouldn’t jiggle when you shake the dish).

The final dish should have a soufflé-like texture, a toothpick inserted into the middle might not come out clean. Serve hot or at room temperature.
