2-1/2 lbs (about 6) fresh sweet potatoes
vegetable oil
6 T. butter (3/4 stick)
3 T. honey
1 tsp. freshly squeezed lemon juice

Topping:
3/4 c. brown sugar
3/4 c. flour
1/2 c. butter (1 stick), melted
1/2 c. Grape nuts cereal or 1 c. chopped pecans

Directions:
Directions:
Preheat oven to 350ºF. Rub potatoes with vegetable oil; place on foil lined baking sheet. Bake 1 hour. Let potatoes cool; then peel and cut lengthwise into quarters. Arrange the quarters in a buttered 13x9x2 baking dish. In a small saucepan, over medium heat, heat the butter, honey and lemon juice until butter is melted. Pour butter mixture over sweet potatoes ; toss to coat. Mix together all topping ingredients and sprinkle over potatoes. Bake for 30 to 45 minutes, or until bubbly.
