500g self raising flour
2 tsp baking powder
140g butter, cubed
½ red pepper, finely chopped
½ red onion, finely chopped
100 g Cheddar cheese, grated
1 egg, beaten, plus extra to glaze
250ml milk

Directions:
Directions:
Preheat oven to 210ºC. Grease a baking sheet.

Sift the flour and baking powder into a mixing bowl. Add the butter and rub in using your fingertips until the mixture resembles fine crumbs. Stir in the red pepper, onion and cheese.

Add the beaten egg and then start to add the milk. Mixing with a round-bladed knife, keep adding milk until you have a soft dough. You may not need all of the milk.

Turn out onto a floured surface and knead briefly, then roll out to about 3cm thick. Stamp out using a 7cm round cutter. Place on baking sheet and brush the tops with beaten egg.

Bake for 10-12 minutes until risen and golden brown.

I had some whole meal flour I wanted to use up, so I used that instead of white.
