4¼ oz caster sugar
3 oz plain flour

Directions:

Grease 2 7 inch sandwich tins and dust with flour and sugar.

Put eggs and sugar in a large bowl and whisk until light and creamy. Mixture should be light enough to retain the impression of the whisk for a few seconds.

Sift half the flour over the mixture and fold in very lightly with a tablespoon. Add remaining flour in the same way.

Pour mixture into tins and bake on a center shelf of oven preheated to 160º for 20-30 minutes.
