4 egg whites (reserve yolks)
¼ tsp cream of tartar
8 oz caster sugar with 1 level tsp cornflour mixed together

Filling:
4 reserved egg yolks
4 oz caster sugar
Juice and grated rind of 1 lemon
½ pint whipped cream

Heat oven to 150ºC

Whisk egg whites with cream of tartar until stiff then, still whisking, add 1 tablespoon of sugar at a time until it is all used.

Draw 2 circles (about 8 inches) on baking parchment and smooth meringue into two circles. Place flat on a baking sheet and put into oven turned down to 140ºC. Bake for 1 hour, changing trays over.

Leave to cool and then remove parchment.

FILLING:

Put egg yolks into saucepan with caster sugar and stir until creamy then add lemon rind and juice. Stir over medium heat until thick.

Turn off heat and keep stirring for a while - you are making lemon curd, really. Leave to cool then fold in ½ of whipped cream with metal spoon. Put this onto one of the meringue rounds and place the other on top.

Decorate with remaining whipped cream, icing sugar and additional lemon rind.
