6 Seville oranges
1 small lemon
4 pints cold water
4 lbs preserving sugar

Wash oranges and lemon. Cut in half. Remove juice by squeezing. Put pips in a muslin bag and cut oranges and lemon into thick shreds.

Put juice, shredded peel, pulp and pips (tied in muslin) into large pan with water. Measure height of contents and mark the level. Boil for about 2 hours or until the depth has been reduced by rather more than a third.

Remove pips then add sugar. Bring to the boil and stir constantly over a gentle heat until it has dissolved. Boil for 1 1/2 to 1 3/4 hour until the colour has darkened slightly and the preserve sets firmly when tested.

Pour into pots and cover immediately. Store in a dry place. Enjoy!
