Ingredients: * 1 1/2 pounds boneless, skinless chicken breasts (or chicken thighs if you prefer those) * 16 oz of your favorite salsa * 32 oz of chicken or bone broth * 8 oz of Monterey or pepper Jack cheese (cubed)

Directions:1. Place chicken at the bottom of your crockpot. 2. Add remaining ingredients. (Broth, salsa, cheese) 3. Cook on high 4 hours or on low for 6-8 hours 4. Remove chicken and shred. Return to crock pot. 5. Serve hot |

Notes: This is one of our favorite go to meals. We usually have the ingredients at home so it can be thrown together very fast.
We typically eat this meal as a soup but if you add less broth this could easily be eaten for tacos!
If the 4 ingredients aren’t enough for you, you can easily build on this and use it as a foundation. We’ve added corn and kidney beans before and that was pretty good. I just love the ease of only 4 ingredients for a quickly prepped dinner :)
