* 1 1/2 pounds boneless, skinless chicken breasts (or chicken thighs if you prefer those)
* 16 oz of your favorite salsa
* 32 oz of chicken or bone broth
* 8 oz of Monterey or pepper Jack cheese (cubed)

Directions:

1. Place chicken at the bottom of your crockpot.
2. Add remaining ingredients. (Broth, salsa, cheese)
3. Cook on high 4 hours or on low for 6-8 hours
4. Remove chicken and shred. Return to crock pot.
5. Serve hot

This is one of our favorite go to meals. We usually have the ingredients at home so it can be thrown together very fast.

We typically eat this meal as a soup but if you add less broth this could easily be eaten for tacos!

If the 4 ingredients aren’t enough for you, you can easily build on this and use it as a foundation. We’ve added corn and kidney beans before and that was pretty good. I just love the ease of only 4 ingredients for a quickly prepped dinner :)
