2 -10 oz. Pork Tenderloins
1 c. Whole Cranberry Sauce
1 Shallot, chopped
1 tbsp. Lemon Juice
½ c. Fruity Red Wine (Pinot Noir)
2 tsp. Major Grey Chutney (relish isle, thick & chunky(
1½ tsp. Dry Rosemary
1 tbsp. Canola Oil
Salt
Pepper

Directions:

Rinse meat, season with salt and pepper. In blender puree remaining ingredients. Microwave pureed ingredients for 5 minutes until thick and syrupy (if too thick, add more wine). The glaze will be tart and spicy. Cook meat over medium hot heat 8-10 minutes. Meat temperature needs to be 150º to 155º. Baste heavily last 5 minutes. Heat glaze, cut meat diagonally and drizzle glaze over meat.
