1 cup vegetable oil

3 large eggs

3 tsp. vanilla

2 cups carrot, grated

1 medium apple, grated or finely chopped

1 (8 oz) can crushed pineapple, drained

½ cup sweetened coconut flakes

½ cup walnuts, chopped

½ cup raisins

2¼ cup all-purpose flour

1¼ cup sugar

1 T. cinnamon

2 tsp. baking soda

1 tsp. salt

1. Preheat oven to 350* with oven rack in the middle position. Line 2 muffin tins with paper cups for 18 muffins.

2. Whisk together oil, eggs, and vanilla in a large bowl. Add in carrots, apple, pineapple, coconut flakes, walnuts and raisins and mix until thoroughly combined.

3. In a separate bowl, whisk together the flour, sugar, cinnamon, baking soda, and salt. Add to wet ingredients and stir until just combined. Mixture will be thick- don't over mix!

4. Divide batter evenly among the 18 muffin cups, about ¾ full.

5. Bake for about 25-27 minutes until tops are golden and springs back when lightly pressed and a toothpick inserted in center comes out clean.

6. Remove from the oven and allow to cool for atleast 10 minutes. Serve warm or at room temperature
