Ingredients: 4 cups cooking apples, peeled, cored, and chop 1 inch (4-5 large apples)
4 large eggs
1 cup vegetable oil
2 tsp. vanilla
2 tsp. baking soda
2 tsp. salt
2 tsp. salt

3 cups all-purpose flour
2 cups white sugar
Topping:
¾ cup all-purpose flour
¼ cup white sugar
2 tsp. cinnamon
½ cup butter, room temperature
Brown Sugar & Cinnamon Butter
½ cup butter, room temperature
¼ cup brown sugar
1 T. cinnamon
1 (1ft) sheet parchment or wax paper.

Directions:Preheat oven to 350*
Lightly grease & flour two 9x5 inch loaf pans and set aside.
Peel, core, and chop the apples. Cut into good sized chunks, about 1 inch in size. In a large bowl, beat eggs with electric mixer until fluffy. Add oil and beat until combined. Add vanilla, baking soda, salt, and cinnamon. Beat until thoroughly mixed. Next, add flour and sugar and mix on low just til blended. Turn the mixer to high and beat until smooth. The batter will be very thick, almost like cookie dough. Fold in the apples, mixing by hand with a spoon so the apples do not get broken up.
Divide the mixture between the two pans. Since batter is so thick, it is easiest to spoon the batter into pans.
To prepare the topping, combine flour, sugar, & cinnamon in a small bowl. Cut the butter into the mixture with a fork until all ingredients are moist & crumbly. Sprinkle equal amounts to each loaf.
Bake for 1 hour on center rack of oven. Loaf should feel fairly firm in the middle when pressed.
Remove from the oven and place on cooling rack. Cool for 5 minutes then remove from pan to cool completely.
***Butter Recipe***
Place butter, brown sugar, & cinnamon in medium bowl. Mix until very smooth! Place butter on edge of the paper and roll tightly. Twist both ends of the paper & freeze until firm, about an hour. |
