Seasoned Sweet Potatoes
3-4 sweet potatoes
1 Tbsp. olive oil
Adobo seasoning
Chili Powder

Toppings
can of black beans, drained and rinsed
1/2 cup chopped onion
3/4 cup shredded cheddar or Mexican-blend cheese
salsa (I like salsa verde)
sour cream or plain Greek yogurt
Other topping suggestions: sliced jalapeņos, halved cherry tomatoes, black olives, corn, sliced avocado

Directions:
Directions:
1) Preheat oven to 425 degrees. Wash and dry sweet potatoes. Peel and slice potatoes into 1/8 inch thick rounds.

2) Toss sweet potatoes in olive oil.

3) Spread sweet potato rounds into a single layer on cookie sheet. Drizzle with cooking oil and sprinkle with Adobo and chili powder.

4) Place baking sheet in oven and cook for 20 minutes. Flip and cook for 10 more minutes. Remove pan from oven.

5) Once sweet potatoes are done cooking, top with shredded cheese, black beans, and onions. Return pan to oven for just long enough to melt the cheese.

6) Once cheese is melted, remove sweet potatoes from oven and top with dollops of sour cream/plain Greek yogurt, and any other toppings of your choice. Enjoy right away!
