¼ cup butter
1½ cups onion, cut into large chunks
¼ cup flour
½ tsp salt
½ tsp dried leaf marjoram
1-13½ oz can chicken broth
1-4 oz can sliced mushrooms, drained (reserve liquid)
2 tbsp lemon juice
¾-1 cup milk
3 medium potatoes, pared and diced
3 cups cooked, diced chicken
1-10 oz pkg frozen peas, thawed
Pastry for 1-9" pie shell
1 egg yolk

Directions:
Directions:
Preheat oven to 375º.
In a large saucepan, melt butter and saute onions until golden. Blend in flour, salt and marjoram. Cook, stirring constantly,1 minute.
Combine chicken broth, liquid from mushrooms, lemon juice and enough milk to make 3 cups liquid.
Gradually stir liquid into flour mixture, stirring constantly, until it boils and thickens slightly. Remove from heat.
Add potatoes, chicken, peas and mushrooms.
Turn into a 2½ quart casserole dish.
Roll out pastry to 1" longer than casserole dish. Place crust over casserole and press gently around sides of dish. Cut slits in pastry to allow steam to escape.
Mix the egg yolk with 1 tsp water, brush over pastry.
Bake for 35-40 minutes until pastry is golden.
