3 lbs. chicken cooked and cubed.
¼ cup soy sauce
1⅓ cups chicken broth
⅓ cup plus 2 Tbsp brown sugar
3½ Tbsp cornstarch
⅓ tsp salt
⅓ cup pineapple juice
½ cup vinegar
3 Tbsp soy sauce
2 green or red peppers, cut into strips
1 large onion, cut into 16ths
1 large can pineapple chunks, well drained

Directions:

Pour ¼ cup soy sauce over chicken. Mix lightly. Add chicken broth. Simmer 5 minutes. Combine sugar, cornstarch and salt. Add pineapple juice, vinegar and 3 Tbsp soy sauce to sugar-cornstarch mixture. Mix until smooth. Add to meat while stirring. Cook slowly until thickened, 15 min. Before serving, add green peppers and onions. Cook gently. Just before serving, add pineapple chunks. Serve over rice.
