6 individual servings grouper
fillets
1 lemon, juiced
1/8 tsp. white pepper
1/4 tsp. salt
1/4-1/2 c. flour
1/2-3/4 c. corn oil
6 sprigs parsley, garnish
1 orange, sliced, garnish

PECAN BUTTER:
4-8 Tbs. butter or margarine
1/4 c. light brown sugar
1/3-1/2 c. chopped or ground
pecans

Directions:
Directions:
1. Season fillets with lemon juice,
white pepper and salt; dredge
lightly in flour.

2. Heat oil in sauté pan; cook fillets
in hot oil until golden brown; turn
and cook, covered, over low heat
until fork tender. Do not overcook.
Remove fish, drain and keep warm.

3. Empty sauté pan and wipe with paper
towel. Add butter/margarine, brown
sugar and pecans. Cook over medium
heat until butter foams and pecans
begin to brown slightly. Do not scorch.

4. Pour over fillets; garnish with parsley
and orange slices.
