1-1/2 sticks (6 oz.) margarine
2 rolls Ritz crackers (crushed)
5 large onions
8 oz. Parmesan cheese

Directions:
Directions:
Melt 1 stick of margarine and pour over crackers and mix. Slice onions into thin rings, and sauté in remaining 1/2 stick until transparent. Put 1/2 onions in greased casserole dish. Next, sprinkle 1/2 the cheese and then 1/2 the crackers mixture over onions.
Repeat layering of onion, cheese and crackers. Bake at 325ºF for about 30 minutes.

I found this in a local weekly paper. I have enjoyed making it for years. It is good to make for eating at home, but the crackers on top get wet if you transport it to a reunion. Use of fat-free or reduced fat Ritz or Smart Balance butter reduces the calories.
