The Texas Hunter

1 (2 to 2 Żlb.) venison steak
1 c. Burgundy wine
1 clove garlic, minced extra fine
1 small onion, diced very fine
1/4 tsp. oregano
1 T. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
2 tsp. prepared mustard
1 T. sugar
2 T. butter

In a small saucepan, combine all ingredients, except venison steak, and heat until butter is thoroughly melted. Pour sauce over steak and refrigerate 2 to 3 hours, turning meat frequently. Remove steak from sauce and broil for 5 minutes on each side, basting the meat with the sauce. Makes 4 to 6 servings.
