1 Whole Eggplant
1/2 cup pre-made pizza sauce
Parmesan & Mozzarella shredded cheese mixture

Directions:
Directions:
Preheat oven to 375 degrees.

Slice eggplant in half inch slices

Place it on a baking sheet lined with foil wrap.

Add about a tablespoon of pizza sauce to the top of the eggplant and bake it for 15 minutes.

Sprinkle cheese on top of eggplant and bake for five additional minutes.

Remove from oven and serve hot.
