2 cups Rice Flour
2 cups water, boiled
1 tsp. oil
Pinch of Salt

For Filling:
2 cups fresh/frozen shredded coconut
1 cup Jaggery (Gud)
Pinch of Salt
¼ tsp. Cardamom Powder for Flavor

For Covering:
1) In a big container, boil the 2 cups of water. Once the water starts boiling, add the oil and salt. Add rice flour to the hot water and shut off the stove.

2) Empty the contents of step 1 in a big plate to knead the dough.

3) While kneading, you can apply a little water or oil to your palms, as needed, as you go.

4) Cover the dough with a wet paper towel or pan/pot lid and let sit while you make the filling.

For Filling:

1) In a pan, heat the fresh coconut and Jaggery(Gud) until the Jaggery melts and the mixture becomes sticky to the touch. Shut off the stove.

2) Now add the salt and cardamom powder. Stir in.


With Both Parts Ready:

1) Portion the dough into small equal balls.

2) With a light hand, roll each small ball of dough out with a rolling pin to form a small flat circle of dough (like Puri), but not too thin. Roll lightly to prevent cracking of the dough.

3)Hold the circle in the palm of your hand in a cupped shape.

4) Pinch the circle all around, from top to bottom, to form "petals" or ridges, as pictured.

5)Spoon approximately 1 tbs of the filling into the center of the dough circle.

6) Like with a dumpling, slowly pinch around the top of the circle, bringing the edges closer together, until the top comes to a point. Set aside and repeat for each circle of dough. As you set them aside, cover with wet paper towels to prevent them from drying out.

7) Steam modaks for 15-20 minutes using a dhokla container, top rack of rice cooker, etc...

8)Now the modaks are ready to serve! Enjoy!
