Meatballs:
1 lb. ground chicken
½ cup bread crumbs
¼ cup shredded gruyere cheese
3 tbsp. chopped parsley
2 cloves garlic, minced
2 eggs beaten
1 tbsp. salt
Freshly ground black pepper

Sauce:
2 tbsp. olive oil
4 tbsp. butter
1 white onion sliced
1 clove garlic, minced
1½ cup beef stock

Directions:

1. Mix all ingredients in large glass bowl
2. Make tablespoon size balls
3. Pour olive oil on sheet pan and bake balls at 425º for 25 minutes.
4. Melt butter in skillet and add onion slices and saute until soft add garlic and thyme cook 2 minutes
5. Add beef stock and reduce/simmer 10 minutes
6. Add cooked meatballs to skillet and finish with grated gruyere cover and simmer 5 more minutes.
Serve immediately
