1/4 cup butter
1 large onion, sliced thin
1 # Carrots , sliced thin
1 t. thyme
1 bay leaf
1/2 cup chicken stock
salt and pepper to taste
1 1/2 cup heavy cream

Directions:
Directions:
Sweat onion and carrots in butter with the spices.

Add chicken stock and reduce heat.

Add salt and pepper and nutmeg and heavy cream. Reduce heat and simmer till thickened.

Note: May substitute pearl onions.
