3 cups crushed vanilla wafers
1/2 cup melted butter
1 pint heavy whipping cream
3/4 cup sugar
24 oz cream cheese (3, 8 oz bricks, softened)
2 pkg instant banana cream pudding (3.4 oz ea)
Whipped topping and sliced bananas, for garnish

Directions:

In a medium bowl, combine crushed vanilla wafers and the melted butter.

Line the bottom and sides of an 8x8 (or 9x9) pan with a sheet of parchment paper. Press the crumb mixture into the bottom of the prepared pan. Chill the crust in the refrigerator or freezer, while you prepare the next steps.

In a large COLD metal mixing bowl, whip the heavy cream and sugar together until stiff peaks form when mixer blades are lifted. Set aside.

In a large mixing bowl, beat the cream cheese until smooth. Add the dry pudding mixes a little at a time, beating in between each addition. Add the whipped cream and mix.

Spread the cheesecake filling over the chilled crust. Cover the pan with plastic wrap and refrigerate for 8 hrs or over nite.

Cut the chilled cheesecake into 9 squares. Garnish with whipped topping and sliced bananas.
