Indonesian Peanut Chicken Recipe

3 lb cut-up broiler-fryer chicken
¾ tsp salt
½ tsp pepper
2 Tbsp high-heat oil, like canola or avocado
1 medium onion, chopped
⅓ c peanut butter
2 Tbsp chili sauce
½ tsp cayenne pepper (optional for more heat)
1 c water
¼ c chopped salted peanuts
¼ c chopped red bell pepper

Directions:

1. Pat chicken dry and sprinkle with salt and pepper.

2. Heat oil in large skillet or 4 qt Dutch oven over medium heat. Cook chicken in oil about 15 minutes, turning occasionally, until brown on all sides. Cover and cook over low heat about 20 minutes, or until juice is no longer pink in the center of the thickest cuts. Remove chicken from skillet with tongs.

3. Drain all but 1 Tbsp drippings from skillet and heat on medium heat. Add onion and cook in drippings, stirring occasionally, until tender; reduce heat to low.

4. Stir in peanut butter, chili sauce, and optional cayenne pepper. Gradually stir in water, stirring constantly, until peanut butter is melted.

5. Add chicken back into sauce. Spoon sauce over chicken. Heat to boiling briefly, then reduce heat. Simmer uncovered about 5 minutes, spooning sauce over chicken frequently, until sauce is slightly thickened.

6. Serve sauce over chicken. Sprinkle with peanuts.
