4 slices of bacon, center cut is best...
4 Chilean Sea Bass, total weight of 24 oz.......6 oz. each....
1/8 t pepper...
1pint cherry tomatoes, rinsed...
1 jar (4.5 oz.) garlic stuffed green olives...
1 C per-diced red onions...
2 T EXVO....

Directions:
Directions:
Pre-heat large sauté pan on medium-high heat for 3 minutes....
Cut bacon slices in half, place in sauté pan...
Cook bacon one or two minutes, until it becomes crisp....
Season both sides of fish, place on top of bacon....
Reduce heat to medium-low, cook 4 to 5 minutes, no turning of fish....
Have tomatoes cut into quarters and chop olives, coursely, place both in a medium bowl, add onions and EXVO, MIX WELL......
Pour tomato mixture over the fish and cook 4 minutes or until temperature of fish reaches 145º F...
Fish should be opaque and separates easily with a fork....

Cooking time varies depending on thickness of fish....
Serve....

Serve with creamy orzo and broccoli flowerettes and a tomato salad, Greek salad or a tossed green salad...
