Tbs. Oil
Tbs. Butter
4 medium Yukon Gold Potatoes, cut lengthwise into 8 wedges
4 Cloves Garlic, minced
Tbs. Olive Oil
2 Tbs. Lemon Juice plus 1 Tbs. Lemon Zest
2 Tbs. fresh Oregano
ts. Salt
1/2 ts. Pepper

Directions:
Directions:
Heat oil & Butter in12" skillet over medium heat until butter melts & foaming stops
Add Potatoes in a single layer, cook until golden brown, about 6 minutes
Turn Potatoes, cook until golden brown, about 5 minutes
Reduce heat to medium-low, cover and cook until Potatoes are tender
While Potatoes are cooking, combine Garlic, Olive Oil, Lemon Juice, Zest & Oregano
When Potatoes are tender, add Garlic-Lemon mixture, Salt & Pepper
Stir carefully not to break the Potatoes
Cook, uncovered 1-2 minutes
Serve & Enjoy
