Ingredients: 2 t. sugar 1/4 c. butter, cubed 2 oz. semisweet chocolate, chopped 1/2 c. powdered sugar 1 egg 1 egg yolk 3/4 t. instant coffee granules < 1/2 t. vanilla extract 3 T. flour 1/4 t. salt Vanilla ice cream

Directions:* Grease the bottom and sides of 2 (6 oz. each) ramekins; sprinkle each with 1 t. sugar. Place ramekins on a baking sheet; set aside.
* In a medium microwave safe bowl, melt butter and chocolate; stir until smooth. Stir in powdered sugar until smooth. Whisk in the egg and yolk, instant coffee and vanilla. Stir in flour and salt; spoon batter into prepared ramekins.
* Bake at 400º for about 12-16 minutes or until a thermometer reads 160º and cake sides are set and centers are soft.
* Remove ramekins to a wire rack to cool for 5 minutes. Carefully run a small knife around cakes to loosen. Invert warm cakes onto serving plates. Lift ramekins off cakes. Serve warm with ice cream. |

Notes: This recipe is HALF of original recipe (4 ramekins) - but one ramekin can serve 2 people. Very rich! Best served fresh out of the oven.
