Directions:
Directions:
Peel tomatoes by roasting them first, 400ºF on convection bake for about 15 minutes, or just buy whole peeled tomatoes in a can.
Sauté garlic and onions in evoo.
Puree tomatoes with immersion blender while they cook in a heavy saucepan or dutch oven on the stovetop on medium heat.
Add basil and oregano.
Add tomato paste and/or wine if desired.
