16 oz extra-firm, pressed tofu
burrito-sized tortillas
tostadas OR (our favorite) siete flavored tortilla chips
black beans
favorite salsa
shredded lettuce
olive oil
taco seasoning
**cheese + sour cream of your choice*

Directions:
To make the tofu: heat 2 TBSP olive oil in nonstick pan over medium heat - crumble in tofu and toss to coat. Add 2 TBSP taco seasoning + pinch of salt, stir. Once homogenous, let sit (no stirring) for 8-10 minutes on medium-low heat until some crumbles are browned + slightly crunchy.

Slice one tortilla into quarters.

**we normally cook the black beans the same as above, and choose either black beans OR tofu, but would be great with both!

To assemble the crunchwraps: lay burrito tortilla on your cutting board. Layer tofu/black beans, lettuce, tostada or tortilla chips, salsa, then lay one of the tortilla quarters on top of salsa (or cheese would be great here!) Fold edges of bottom tortilla over filling and towards center.

Place seam-side down on hot, lightly oiled pan and gently press with spatula. Cook 2-4 minutes on each side, until tortilla is crunchy and golden brown.
