4 medium oranges
2 medium lemons
2 ½ cups of water
⅛ teaspoon of baking soda
2 ounces of powdered pectin
6 ½ cups of white sugar

Using a soft scrub brush, scrub oranges and lemons, and dry. Using a vegetable peeler of paring knife, remove only the outer-colored portion of the peel in strips. Slice peel into thin strips of equal size. With a knife, peel off the outer portion of pith and membrane of the oranges and lemons. Remove any seeds. Peel into sections, then chop, reserving any juices.

In an 8-quart stainless steel pot, combine orange and lemon peel, water, and baking soda. Bring to boil over medium heat. Reduce heat to simmer, cover and simmer for 20 minutes, stirring occasionally. Add orange and lemon sections and any reserved juice to pot, cover and simmer for 10 minutes, stirring occasionally. Remove cover, and slowly stir in pectin. Increase heat to medium-high and bring to full rolling boil, stirring constantly. Add sugar, while stirring constantly until sugar is completely dissolved. Return to full rolling boil, while stirring constantly. Boil for 1 minute. Remove pot from heat, skim off any foam, and ladle into prepared jars.
