FRESH JALAPEÑOS .

FILLING:
Cream cheese
Pepper Jack or Jack cheese
Boursin garlic herb cheese (optional). Really yummy!!
Spices to taste (see comment section)

TOPPINGS:
Bacon bits (not cooked totally crispy, as they will continue to cook in the oven when peppers are being baked

Pinko breadcrumbs tossed in melted butter. You can season to taste using chili powder, garlic powder, etc....

Preheat oven to 400º

JALAPEÑOS
Wash, dry and cut lengthwise. Scrape out the seeds, and reserve some seeds to spice up the filling. Line them up on a foil lined baking sheet.

FILLING:
In a food processor, combine cream cheese and other cheeses and spices. You want a thick consistency so it can be piped from a pastry bag. Use more jack cheese than the creamy cheeses, otherwise the cheese will melt and run out of your peppers in the oven.

Fill a pastry bag, or a zip lock baggie without a tip. Pipe cheese filling into each pepper, top with bacon bits and panko crumbs.

Bake about 30 minutes until crumbs are golden brown and cheese is melted.

IMPORTANT NOTE: WEAR GLOVES WHEN YOU WORK WITH FRESH CHILIS!! If you don’t, and you burn your fingers, fresh aloe will help relieve pain.

Spices: Sister uses different spices, dependent upon who she’s making them for. Example, you can grind up a whole jalapeño using the meat and seeds. Or you can add chili powder, cayenne powder, reserved seeds from cleaning peppers.... just keep tasting until you like it.
