4 c. Flour, sifted
¾ tsp. Baking Powder
¼ tsp. Salt
½ tbsp. Sugar
1 c. Boiling Water
1 c. Cornmeal
⅔ c. Buttermilk, or thick sour milk
1 Egg
1 tbsp. Butter, or other fat

Pour boiling water over cornmeal and stir until smooth. Let stand 15 minutes. Combine flour, baking powder, salt and sugar. Add milk, egg and butter. Mix well. Bake on hot griddle.
